Warming Yams with Collards

  • 2 yams sized to taste
  • 1 tablespoon Sucanat /sugar
  • 1/4 cup orange juice
  • 1 teaspoon cinnamon
  • 1 chunk fresh ginger
  • vanilla
  • water
  • Collard greens
  • fresh peas, corn, carrots, squash to add as side dishes

Directions:
Clean and then wrap in foil your two yams or you can just pop them in the oven n a pan. Place them in the oven and leave them to cook at 350 degrees for approx. one hour. When the yams are about half cooked, put water, juice, spices ginger chunk and  sugar in saucepan. Bring to a boil and let bubble for 10 minutes, stirring so that it doesn’t burn. Leave this sitting there on low, then began to steam greens and other vegetables. When everything is fully cooked, drizzle the yams with the sauce, serve up and dig in.
